Description
Good Dog Bruno is organic Pét Nat sparkling wine made from our Selena still wine, that was judged by four Masters of Wine to be the best organic wine in the Balkans and was awarded double-gold medal.
Pét Nat type of sparkling wines existed before Champagne method was invented. It is a quick and dirty method that can be applied without sphisticated equipment and in small batches (you could make only one bottle). Basically, bottles are filled and capped before the fermentation in the tank is over and it completes in the bottle. It is difficult to judge the right moment to do this. Too early and bottles will have too much pressure and may explode. Too late and there won’t be any bubbles.
Also, since the fermenting wine is turbulent and has residue disproportionately distributed, each bottle receives a different amount of residue and thus each bottle is a bit different – an original. Residue mixes with the wine during explosive opening and wine in the bottle is murky. On the other hand, Pét Nat has more body than Champagne and maintains varietal aromas. It has become very popular among younfer consumers in the 21st century.
Good dog Bruno should be served very cold. Keep it in refrigerator and then place it in a freezer one hour before serving. Or put it in a container with a mixture of water and ice.
